The Best Gooey Triple Chocolate Vegan Cookies!

Saying lockdown has massively improved my cooking, would probably be the understatement of the century. I can honestly say I've gone from the uni student who can barely cook pasta, to the the boojie girl who soaks chickpeas and plans her meals a week in advance. I know, shocking. And to think, all it took for me to get my shit together was a pandemic... Well, that and my flatmate Lucy who is honestly the literal queen of baking. As big cookie fans who had yet to find the perfect vegan cookie, we decided lockdown was the ideal time to experiment. So, without further ado (because we always complain about recipes having way too much boring nonsense at the begining), this is our recipe for the ultimate vegan triple chocolate cookie.


Ingredients:
  • 1/2 cup Vegan Butter 
  • 1/2 cup White Caster Sugar
  • 1/2 cup Brown Sugar 
  • 1 tsp Vanilla Extract
  • 1 cup Plain Flour
  • 3/4 cup Unsweetened Cocoa Powder 
  • A pinch of salt 
  • 1 tsp Bicarbinate of Soda 
  • 2 tbsp Unsweetened Almond Milk
  • 90g Dark Chocolate (cut into chips)
  • 90g Vegan White Chocolate (or other vegan chocolate. On this particular day I used mint dark chocolate as vegan white chocolate is pretty much unheard of in France!) (cut into chips) 

Method:    
  1. Preheat the oven to 180°c on fan and line two flat trays with baking paper or an alternate non-stick base. (We use silicone mats!)
  2. Cream together the butter, brown sugar and white caster sugar to form a smooth paste. Add in the vanilla extract and mic until combined. 
  3. In a separate bowl mix together the plain flour, cocoa powder, salt and bicarb. 
  4. Slowly add the dry ingredients to the wet, mixing well with a wooden spoon until thick and slightly doughy.
  5. Add in the milk to create a smooth, sticky, thick mixture. It should be hard to mix, but have a smooth, sticky texture. 
  6. Mix in the chocolate chips. (I prefer to use large chunks)
  7. Spoon (Use a ice cream scoop if possible!) 12 balls onto the baking trays equally distanced apart (These cookies will need room to expand). 
  8. Pat down the cookies slightly with the palm of your hand. Just so they are slightly flat on top. 
  9. Place in the oven a cook for 15 minutes. 
  10. Once removed from the oven do not remove from the trays until completely cooled. Cookies will be very soft, but will harden.



 *Can be kept for up to three days in an air tight container

  2. Oh my god, I love gooey chocolate cookies. Just one question though, I don't know much about vegan products, so what exactly is vegan butter?

  3. The only gooey treats I have ever loved are brownies, but these remind me of brownies and look delicious. I love my cookies soft so I cannot wait to try these!

  4. These look unreal. I love how big the chunks are.

    It says 256 calories per serving but how much is a serving haha, surely not just one cookie :(
